An authoritative visual guide detailing the 6-stage lifecycle of *Euryale ferox*, Mallah community diving techniques, high-temperature manual popping, and modern optical grading.
Unlike commercial wheat, rice, or corn, *Euryale ferox* (Gorgon nut or Fox nut) is an aquatic perennial plant whose thorny leaves and prickly pods submerge entirely in wetland ponds (*pokhars*). There is no automated combine harvester capable of retrieving raw seeds from muddy pond beds without destroying the aquatic bio-system.
Selected heirloom seeds from previous harvests are broadcast into nutrient-rich wetland silt. By January, small floating seedlings emerge with sharp protective thorns on both sides of the leaves.
Vibrant violet-purple flowers bloom on floating leaf blankets. As the prickly fruit matures, it contains between 20 and 30 hard black-shelled seeds wrapped in bright red arils.
The mature seed pods rupture and sink to the pond floor. Experienced local cultivators dive 4 to 6 feet deep, using bamboo baskets (*Gaanj*) to sweep the pond bottom and scoop up the mud-laden raw seeds.
The mucilage coating is washed off through foot-rubbing in shallow waters. Raw black seeds are graded into 5 size drums and spread on clean mats under intense North Bihar sun for 48 to 72 hours.
Dried seeds undergo two-stage pan heating (up to 280°C). Artisan poppers swiftly transfer scorching seeds onto a hard wooden block and strike them instantly with curved wooden mallets (*Thapi*). The hard black shell cracks open, puffing the pure white kernel outward in a split second.
Popped kernels pass through multi-channel optical color sorters at our Saharsa facility. Defective black-spotted seeds are ejected, and prime kernels are segregated into 7-Suta, 6-Suta, and 5-Suta batches before vacuum bagging.
